Shabby Chic, Beach Cottage, and Woodsy Whimsical

 

Ryan and I have been busy, busy, busy remodeling our house!  I am hoping to post a lot of pictures as we make progress!  Here is a picture of a couple of my recent antique finds.  My decorating theme is shabby chic meets beach cottage meets woodsy whimsical.  I'm trying to figure out a way to tie all of those aspects together.  I am so excited to start decorating! :)  Have a fabulous weekend xoxo

[Easier] Homemade Margherita Pizza

As I was deciding what to cook for supper last night, I came across a recipe for margherita pizza on my Pinterest "Dinner" board.  The dough recipe, though, required yeast and I did NOT feel like working with yeast last night.  It takes such a long time to let dough rise when using yeast...in this case, 2 hours.  Ya, didn't have the time for that.  So.....I did what most any person would do...hopped on Pinterest and started searching for a pizza dough recipe that required NO yeast.  Now, I've made pizza dough before without yeast, and it always ended up really thick and chewy.  Not what I wanted for this pizza at all.  I was envisioning a light, crispy crust.  I came across this recipe that promised just that.  I did do a few things differently, though.  Below is my adapted version.  I doubled the recipe to make 2 pizzas.  For the sauce, I found this recipe. I also did the sauce a little differently.  My version is below.  Here are the complete directions for yummy margherita pizza:

Ingredients:
 
Sauce (found below)
Dough (found below)
Mozzarella Cheese
Basil
 
First, prepare the sauce.  While it is simmering, prepare the dough.  After baking the dough for 8 minutes, generously place on the sauce (Too little sauce will make the pizza dry!).  Sprinkle on mozzarella cheese (The recipe called for fresh mozzarella, but come on, who really has that on hand?  I used regular shredded).  Don't put on too much cheese.  This type of pizza is all about the sauce!  Then, sprinkle on dried basil.  You could use real basil leaves if you have them on hand.  After rinsing and chopping them into fine strips, you can place them on the pizza right out of the oven.

Sauce:  Yields enough for 2 twelve inch round or 2 thirteen x nine rectangular pizzas

 

Ingredients:
 
Two 28 oz cans of petite diced tomatoes
1 stick of salted butter
1 medium onion, roughly chopped
1-2 teaspoons dried garlic
Salt to taste
 
Directions:
 
1.  Drain some of the juice out of the tomato cans.  (You don't want it to be too runny, but you don't want it to be too dry, either.)
2.  Pour the tomatoes into a saucepan.  Add the stick of butter, chopped onion, garlic, and salt. 
3.  Bring to a boil.  Reduce heat to low and simmer for about 45 minutes.  Stir from time to time.  Halfway through, mash up the mixture.  I used a bean masher. 
 

Dough:  Yields 1 twelve inch round or 1 thirteen x nine rectangular pizza



Ingredients:
 
1 1/3 cups sifted flour (sifted flour makes everything lighter and more airy)
1 Tablespoon dried basil or Italian seasoning
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
2 Tablespoons olive oil
 
Directions: 
 
1.  Heat oven to 400°F
2.  Measure out 1 1/3 cups flour, keeping it in the measuring cups.  Then, sift the flour into a bowl (I do not have a sifter, so I used a small sieve.)  Next, re-measure the sifted flour into the measuring cups.  Pour the remaining flour back into the canister.  Note:  When you measure the flour, be sure to use a spoon to scoop it into the measuring cups so that it does not become compacted and stays fluffy.
3.  In a medium bowl, mix sifted flour, baking powder, salt, and basil or seasoning.  Stir in milk and oil just until soft dough forms.  DO NOT OVERMIX THE DOUGH! It is ok if there are still some flour spots.  You want the dough to be light!
4.  On lightly floured surface, knead dough 10 times.  Shape dough into ball.  Cover with bowl; let stand for 10 minutes. 
5.  Place dough on ungreased cookie sheet (I greased mine, just to be safe.)  Slightly flatten the dough.  Roll out the dough.  It should be really thin.  (I used one round and one rectangular pan for my pizzas.  I liked the rectangular pizza better, because there were crispy corners!  I used stoneware from Pampered Chef.) Poke holes in the dough with a fork.
6.  Bake 8 minutes (VERY important to bake 8 minutes before putting on toppings...if you don't, the pizza will be soggy), then put on toppings and bake for another 20-25 minutes.  (I baked mine until the edges of the pizza were crispy!)
 
Verdict:  Overall, the pizza turned out to be really yummy and fresh-tasting! And the crust was nice and crispy ;)  Enjoy!!

I just love Angie Miller from this season of American Idol.  She is another Colton Dixon but in female form.  She performed "Love Came Down" last week on Idol, and it was beautiful.  The song really spoke to my heart.

Never Gone

I am loving Colton Dixon's song "Never Gone."  It is such a powerful song for me right now at this point in my life.  Sometimes it feels as if God is abandoning me.  One bad thing after another takes place and I don't understand why.  But this song reminds me that God has a reason for everything.  He allows things to happen in our lives to help us understand the big picture.  Everything that happens in our lives fits perfectly together in God's plan for us.

What I've Been Watching Lately...

Lately, I have been watching Beyonce video after Beyonce video because, well, I love Beyonce and I am prepping for her half-time show!  I have also been watching the quick behind the scenes super bowl videos that she has been posting on her website www.beyonce.com.  Below is a video of her performing "I Care" live at Roseland.  If you are a Beyonce fan and haven't purchased her "Live at Roseland" dvd, you need to!  LOVE it! 

 
I have also been watching Glee.  This last week's Glee was a good one!  Here is a video of Marley and Jake singing "A Thousand Years."  Seriously, such a beautiful song. 
Lastly, I have been watching American Idol.  This guy below blew me away.  I couldn't believe how beautifully he could sing.  His stutter vanishes when he sings.  Lovely.

The Hope Series: Day Two: That's What Faith Can Do

After listening to Olga's testimony vlog over at her blog, Our Extraordinary Life, I felt the need to write my second blog post in "The Hope Series."  Olga had SO much hope and faith that she would have a baby boy, that she ended up becoming pregnant with one after overcoming all of the odds.  Her story is such an inspiration and will fill you with so much hope if you happen to be going through the same situation of trying for a certain gender of baby or if you happen to be going through ANY difficult situation.  This song popped in my head after listening to her vlog.  Olga had a dream, prayed for it, believed, never gave up hope, and as a result, saw miracles happen right before her eyes.  Please watch her video found here and be filled with HOPE.

Liebster Blog Award Part 3

The sweet Jessica from Letting Go, Letting God gave me my third Liebster Blog Award. Since I already participated, I'm going to simply answer the questions that she gave me. Thanks, Jessica!

1. If you could learn to do anything, what would it be ?
I have been recently wanting to learn how to crochet.  I want to start out with crocheting a blanket!

2. What is your dream job ?
I am currently student teaching to become an elementary teacher...but if I were to choose something else, I would want to own a bakery or shop of my own selling organic and natural products.  I would also love a job that works with animals. 

3. What is your best or idea of a perfect date ?
The perfect date in my eyes is really low key.  I love to go out to dinner, get dessert, and then rent a movie.

4. Describe yourself in 3 words. Why do these words define you ?
Loving, shy, and creative.  I try to care for all people.  I am an introvert.  I like to use my creativity when teaching dance, baking, and doing crafts and projects. 

5. What do you miss most about being a child ?
I miss everything about being a child, but most of all, I miss the care-free, full of faith attitude that one has as a child.  The faith in Santa Clause.  The strong faith in God (which seems to weaken as you grow older).  And the faith that your parents will always protect you.

6. When was the last time you were nervous ?
Oh gosh.  I am nervous all the time.  I am a very anxious person.   

7. What chore do you despise ?
I despise putting clothes away.  I always have a heap of clean clothes staring at me at all times until the heap gets so tall, that I am forced to put them away. 

8. If you could meet anyone living or dead who would it be ?
Definitely Jesus.

9. Morning or night person
I like really early morning (6-8) and evening (6-11).  I don't really like mid morning and late night.  Weird.

10. If you could live anywhere in the world, where would it be ?
Hmm...probably by the ocean.  South or North Carolina would be perfect.

I want to encourage others through my posts!
