Mexican Wedding Rings

This past weekend, I made a batch of these cookies for my dad for Father's Day.  He LOVES Mexican wedding rings...they were gone in a day!  I really like the way these cookies look and love the way they taste!  Plus, they are super easy to make.  Here is my mother's recipe: 

1 cup butter
1/2 cup powdered sugar
1/2 cup finely chopped nuts (I used pecans)
2 cups flour
1 teaspoon vanilla

Cream butter and powdered sugar until fluffy.  Add nuts and flour.  Mix well.  Add vanilla.  Roll in small balls and press on greased cookie sheet.  Bake 20 minutes at 250 degrees.  Roll in powdered sugar when cool.  Enjoy :)
